How to Make Churros

Step 1: Combine sugar and cinnamon in a shallow dish for the topping. Mix well and set aside.
Step 2: Pour water, butter, sugar, and salt into a saucepan. Heat over medium, stirring until the butter melts. Once melted, reduce the heat to low.
Step 3: Incorporate flour and mix with a rubber spatula until a dough forms. Remove from heat and transfer to your stand mixer bowl. Let it cool for around 15 minutes.


Step 4: Add the eggs one at a time to the stand mixer, using the paddle attachment and mixing in between each addition until the dough reaches a smooth consistency.
Step 5: Pour about 1 inch of oil into a large pot and use a candy thermometer to heat it to 325 degrees F.
Step 6: Once the oil is heated, fill a large piping bag fitted with a large star tip (Wilton tip 4B) with the dough. Pipe 6-inch strips of dough into the hot oil, cutting them off with a knife or kitchen scissors. Fry until golden brown, approximately 3-5 minutes per side. Work in batches to avoid overcrowding.


Step 7: Transfer the golden churros onto a plate lined with paper towels to absorb excess oil. Quickly toss them in the cinnamon sugar mixture and place them on a serving platter. Repeat until all the dough has been fried.


Step 8: For the chocolate sauce, combine chocolate and heavy cream in a microwave-safe bowl. Microwave for 1 minute, then whisk until the mixture is smooth and combined. If it hasn’t melted completely, continue microwaving and stirring in 15-second intervals.
