I don’t usually post mid-week, but I couldn’t wait to share these festive Chocolate Dipped Gingerbread Cookies! They’re an easy and delicious option for cookie exchanges or holiday baking!
The idea for these cookies came from a Chocolate Gingerbread Cake I made recently. They reminded me of traditional Polish cookies my parents buy during the holidays—puffy, soft gingerbread entirely coated in chocolate! While those store-bought ones can often be dry, my version is perfectly chewy.
These Chocolate Dipped Gingerbread Cookies are half-dipped in rich chocolate, giving you the best of both worlds.

- 3 cups all-purpose flour
- 2 teaspoons baking soda
- 2 teaspoons ground cinnamon
- 2 teaspoons ground ginger
- 1 teaspoon ground cloves
- ½ teaspoon salt
- ¾ cup unsalted butter, softened
- 1 cup granulated sugar
- ½ cup brown sugar
- ¾ cup unsulfured molasses
- 1 large egg
- Chocolate for dipping
Instructions
- Preheat your oven to 375°F and line your baking sheets.
- In a bowl, whisk flour, baking soda, spices, and salt.
- In a stand mixer, beat butter and sugars until fluffy. Add molasses and egg, mixing well.
