Delicious Pumpkin Cupcakes with Cream Cheese Frosting
Ingredients
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1 cup pumpkin purée
- 1/2 cup vegetable oil
- 2 large eggs
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 180°C (350°F) and line a muffin tin with cupcake liners.
- In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, and cloves.
- In another bowl, mix pumpkin purée, oil, eggs, sugar, and vanilla until smooth.
- Add the dry ingredients to the wet ingredients and mix until just combined.
- Divide the batter evenly among the cupcake liners.
- Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
- Let cool completely before frosting.
Cream Cheese Frosting
- 200g cream cheese, softened
- 60g unsalted butter, softened
- 1 1/2 cups powdered sugar
- 1 teaspoon vanilla extract
- Beat the cream cheese and butter together until creamy.
- Add powdered sugar and vanilla, then beat until smooth and fluffy.
- Frost the cooled cupcakes and enjoy!
